Coffee Brandy Plum Cake

Raspberry & coconut cake Ingredients
For Sponge Cake:
- 7 large eggs
- 3/4 cup (150 g) sugar
- 1 tsp vanilla extract
- 1 1/2 cups (187 g) all-purpose flour
- 2 tsp (8 g) baking powder
- 1/2 cup (113 g) butter, melted
- 2 tbsp (10 g) instant coffee powder
- For Filling:
- 1 cup (160 g) dried prunes, diced
- 1/2 cup (118 ml) strong coffee
- 1/3 cup (80 ml) brandy or cognac
- 1 cup (237 ml) orange juice
For Cream:
- 3 cups (710 ml) heavy cream, chilled
- 1 tsp vanilla extract
- 2 to 3 cups (375 g) confectioner’s sugar
- 1 can (400 g) dulce de leche, for filling
For Syrup:
- 3/4 cup (180 ml) strong coffee
- 1/4 cup (60 ml) brandy or cognac
- For Garnish:
- chocolate bar for shavings
- chocolate bar squares
