Coffee Brandy Plum Cake

Raspberry & coconut cake  Ingredients

 

For Sponge Cake:

  • 7 large eggs
  • 3/4 cup (150 g) sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups (187 g) all-purpose flour
  • 2 tsp (8 g) baking powder
  • 1/2 cup (113 g) butter, melted
  • 2 tbsp (10 g) instant coffee powder
  • For Filling:
  • 1 cup (160 g) dried prunes, diced
  • 1/2 cup (118 ml) strong coffee
  • 1/3 cup (80 ml) brandy or cognac
  • 1 cup (237 ml) orange juice

For Cream:

  • 3 cups (710 ml) heavy cream, chilled
  • 1 tsp vanilla extract
  • 2 to 3 cups (375 g) confectioner’s sugar
  • 1 can (400 g) dulce de leche, for filling

For Syrup:

  • 3/4 cup (180 ml) strong coffee
  • 1/4 cup (60 ml) brandy or cognac
  • For Garnish:
  • chocolate bar for shavings
  • chocolate bar squares
