INGREDIENTS
- For Sponge Cake:
- 6 large eggs
- 3/4 cup (150g) white granulated sugar
- 1 teaspoon (5ml) vanilla extract
- 1 cup (125g) all-purpose flour
- 1 teaspoon (4g) baking powder
- For Strawberry Marshmallow:
- 1/2 cup (118ml) cold water
- 2 teaspoons (6g) agar gelatin
- 3 large egg whites
- 1/4 cup (60g) water
- 1/4 cup (60g) strawberry jello powder
- 2 cups (400g) sugar
- juice from 1/2 lemon, 1 tablespoon
- red food coloring, optional
- confectioner’s sugar; for dusting
- For Butter Cream:
- 2 cups (453g) unsalted butter
- 3 cups (375g) confectioner’s sugar
- 1 teaspoon (5ml) strawberry emulsion or extract
- For Chocolate Ganache:
- 1/2 cup (118ml) heavy cream
- 1 cup (175g) chocolate melts
- 3 cups strawberries, for filling
