Chocolate Smores Cake

For the Buttery Biscuit Base (BBB) –
200g Digestive Biscuit/Graham Cracker crumbs
60g melted butter
A good squirt of Golden Syrup (or corn syrup)
For the Brownie base –
125g dark chocolate (70% cocoa)
125g butter, chopped
175g caster sugar
3 large free-range eggs
75g plain flour
1/2 tsp vanilla extract
For the Marshmallowy Meringue Icing –
2 egg whites
175g caster sugar
115g/5 tbsp golden syrup (or corn syrup)
2tbsp water (yes, I know it’s not in the video, I’m an idiot. Put it in!)
1/4 tsp salt
1/4/ tsp Cream of Tartar (use 1/2 of vinegar if you can’t get that)
1 tsp vanilla extract
