Yummy Cappuccino Cupcakes!
- 2 cups white granulated sugar
- 1/3 cup butter, softened at room temperature
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 1/2 cups buttermilk or whole milk
- 3 tablespoons instant coffee
- For Butter Cream:
- 2 cups butter, softened at room temperature
- 1/4 cup Kahlua liquor, or strong espresso
- 3-4 tablespoons heavy cream
- 3 cups confectioner’s sugar
- 1/8 teaspoon salt
