Lemon Meringue cupcakes Ingredients:

  • 20 oz of lemon curd
  • 6 egg whites
  • 5 cups sugar

Now pay close attention:

  1. Make cake mix as per box and cook cupcakes
  2. Scoop out centers and fill with lemon curd.
  3. On top of a double boiler, whisk together egg whites and sugar.
  4. Cook over simmering water until reaches 140 degrees f.
  5. Pour sugar into mixer and beat on high for 10 min until cool and thick
  6. Spread meringue onto cupcakes!
